Tuna Meatballs

Ingredients

2 sweet potatoes (large, boiled, mashed and cooled)
2 tins of tuna (in spring water preferably or oil, but not brine)
5 tbsp sweetcorn (cooked and cooled or use tinned)
2 tsp fresh parsley (or use dried), chopped
4 slices of wholemeal seeded bread (whizzed into breadcrumbs)
50g flour (for dipping)
1 egg (for dipping), beaten

Method

  1. Mix the potato, drained tuna and sweetcorn in a bowl - this can be done with hands or spoon (it's easier for children to use their hands)
  2. Take a small amount and roll into golf size balls (or smaller or bigger whatever the preference)
  3. Dip into flour then egg and roll in bread crumbs until covered
  4. Heat 2 tablespoons of olive oil in shallow frying pan and start lightly frying tuna meatballs - move around the pan until the breadcrumbs are golden brown (this will warm them through as ingredients already cooked)
  5. Place on kitchen towel to pat off oil
  6. Serve with pasta twists and your favourite tomato sauce
