Strawberry and Elderflower Oats

Ingredients

100g porridge oats
400ml skimmed milk
200g fresh strawberries, hulled and sliced
40ml elderflower cordial

Method

Elderflower cordial adds sweetness to this summery take on bircher muesli. Start the night before and you'll have deliciously creamy oats ready for the morning.

Divide the oats between 4 bowls. Pour 100ml of milk into each bowl, cover with cling film and place in the fridge overnight. This will enable the oats to soak up the milk becoming soft and creamy.
The next morning loosen with a splash more milk if necessary, add the sliced strawberries and drizzle over the elderflower cordial (approx. 1 tsp per bowl). Eat immediately.

Tip: Use raspberries instead of strawberries and drizzle a little honey over instead of elderflower.
