Baked Chicken With Lemon and Herbs

Ingredients

1 lb boneless, skinless chicken breast, four 4 oz halves
1⁄2 tsp sea salt
1⁄4 tsp black pepper, freshly ground
1 tsp olive oil
2 tsp fresh lemon juice, or to taste
2 tsp fresh rosemary, chopped
2 tsp fresh parsley, chopped
1⁄4 cup chicken broth
1 medium lemon, quartered, for garnish (optional)

Method

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Season both sides of chicken with sea salt and black pepper. Place in a small, shallow roasting pan and drizzle with olive oil. Sprinkle with lemon juice, rosemary, and parsley. Pour broth around the chicken to coat the bottom of the pan.
  3. Bake for 30 to 35 minutes or until the chicken is cooked through. Garnish with fresh lemon, if desired.
